The Village Press Olive Oil
Courgettes & Tomatoes with Garlic & Feta
Ingredients:
- 5 or 6 Courgettes
- 5 or 6 Tomatoes
- 1 x Onion
- 4 x cloves Garlic
- 1/2 Cup freshly grated Parmesan
- 1/4 Cup Village Press olive oil
- Sprig Fresh Mint
- Salt & freshly ground black pepper
- 1/4 Cup Feta crumbled
- 1 tsp Village Press Balsamic Vinegar or Lemon Juice
Method:
Pre heat oven to 220 degrees. Wash & Trim courgettes, slice in half lengthways and cut into 1 cm chunks. Quarter tomatoes. Peel and slice the onion and garlic. Toss the courgettes, onion, garlic, parmesan, seasoning and mint with the olive oil in a large bowl. Add the tomatoes and toss gently so that the tomatoes are well oiled. Transfer to an oiled ovenproof serving dish. Scatter the feta over.
Bake in the hot oven for about 20 minutes, until the vegetables are just tender and the feta lightly browned. Drizzle a little balsamic vinegar over before serving.
